Salt & Straw is set to release a new vegan soda-inspired flavor called Cocoa Nib Root Beer Float at the end of January, made with dark chocolate from Dandelion Chocolate. The plant-based seafood market is expanding with Bayou Best Foods partnering with nationwide foodservice distributors to offer vegan shrimp made from pea protein. Mr. Charlie's, known as the "Vegan McDonald's," has opened its first San Diego location, offering plant-based fast-food options like the Big Mac-inspired Mr. Chuck and "Not Chicken Nuggets."

Amy's Kitchen has joined the Non-UPF Verified program to certify that their products are non-ultraprocessed. Passion Flour, a popular vegan bakery in Utah, has closed down due to the owner's relocation but is planning to shift to shipping their vegan baked goods nationwide from a commercial kitchen space in the future. The bakery's final day of operation will be on February 1.
