A New Vegan Taqueria Opens in Chicago’s Logan Square Neighborhood

Chef Rodolfo Cuadros is opening a new vegan taqueria, Don Bucio's Taqueria, in Chicago's Logan Square Neighborhood. Teaming up with Executive Chef Gustavo Ocampo, the eatery will offer a plant-based twist on traditional Mexican cuisine, serving veganized staples like chorizo con papa and birria. They will also feature unique menu items such as blue corn tortillas and pink tortillas colored naturally with hibiscus flowers.

Cuadros aims to show that vegan food can be delicious and enjoyable without compromising on flavor and quality. The restaurant's colorful and bold decor, designed by Emily Andersson, creates a modern take on the old-school taqueria. Don Bucio's Taqueria opens on February 25th and invites guests to enjoy a sustainable and healthy dining experience in a vibrant setting.
