Anne Hathaway-Backed Company Receives US Patent For Precision-Fermented Eggs

EVERY, a food tech company backed by actor Anne Hathaway, has secured a foundational patent for its vegan egg product that uses precision fermentation to brew liquid egg whites without the need for chickens. The patent covers any ingredient composition for food products that incorporate recombinant ovalbumin, the primary protein found in egg whites.
Ovalbumin, which makes up 54 percent of egg white protein and provides gelling, foaming, and binding abilities, is the key ingredient in EVERY’s B2B egg white replacement product and their EVERY Egg served at Eleven Madison Park in New York. The company has also announced partnerships with Unilever, Grupo Nutresa, and Grupo Palacios, with plans to enter the mass market soon.

EVERY Co-Founder and CEO Arturo Elizondo called the patent a “major milestone” that solidifies the company’s position as a leader in the plant-based food industry. Anne Hathaway had invested in EVERY almost two years ago, contributing to the company’s total funding of USD $230 million as of February 2023. Hathaway affirmed her support for the company’s vision of a sustainable food system and nature-equivalent animal proteins.
