The project, led by NS/TX Industries, New Protein International, and Infusd Nutrition, aims to scale up the manufacturing technology for whole-cut meat and seafood alternatives.

NS/TX Industries, based in Toronto, uses directional freezing to create plant-based scaffolding that mimics animal muscle and connective tissues, providing products with a similar texture and taste to conventional meat. The funding will support the startup's efforts to expand its production of whole-cut seafood, beef, and pork, using locally grown peas, fava beans, and soybeans to improve the nutritional profiles of its proteins. Canada's government continues to invest in alternative proteins as consumers embrace plant-based options, recognizing the importance of protein diversification and sustainability in the food industry.
