Cauliflower Ice Cream Has Arrived – Here’s Where To Buy It

A New Zealand company called EatKinda has created the world's first cauliflower-based vegan ice cream, available at 90 Woolworths stores across the country. Jenni Matheson and Mrinali Kumar, the team behind the ice cream, focus on sustainable practices by using cauliflower that would have otherwise gone to waste and packaging the product in compostable materials.

Despite the unconventional use of cauliflower as a base, the ice cream has received positive feedback and has been quickly picked up by big retailers. The cauliflower adds thickness and bulk to the ice cream without the need for additional unhealthy ingredients. In New Zealand, there is a growing market for plant-based ice cream, with other options available from big brands as well as locally produced varieties using ingredients like sweet potato, avocado, and beetroots in vegan baking.
