Crush Dynamics and Atomic47 Labs to Build Real-Time AI Fermentation Monitoring System With Federal Backing

Protein Industries Canada has committed funding towards a project with Crush Dynamics and Atomic47 Labs to develop an AI-enabled fermentation monitoring platform for Canadian food manufacturers. The system aims to use industrial sensors and machine learning models to monitor fermentation conditions, food safety indicators, energy performance, and process health in real time. This shift from manual oversight to a more autonomous, data-driven process is expected to reduce energy consumption, improve product consistency, strengthen food safety controls, and increase production efficiency.

Crush Dynamics specializes in converting agricultural sidestreams, such as grape pomace, into high-value ingredients for food formulations. With Atomic47 Labs bringing expertise in AI, digital twins, and industrial process optimization to the collaboration, the project aims to improve sustainability, reduce waste, and strengthen Canada's food manufacturing sector.
