Derek Sarno helps transform chicken farm into mushroom-growing operation

Derek Sarno, a Veganuary Ambassador and chef, has collaborated with Smithy Mushrooms and The Little Mushroom Co. to transform a former chicken farm in Norfolk into a sustainable mushroom-growing operation. This project showcases how farms can be repurposed to create more sustainable, plant-based, and cruelty-free food systems. The initiative, guided by John Dorrian at Smithy Mushrooms and supported by Harry Irwin and Claire Bullen from The Little Mushroom Co., uses existing spaces, requires less water and land, and produces nutrient-rich mushrooms.

With Sarno's culinary expertise and experience with mushrooms, the project aims to connect sustainable farming practices with delicious flavors. By showcasing the versatility of mushrooms in replacing meat textures in various dishes, the team is redefining how we farm and cook. A 17-minute short film produced by Oh Brother Creative documents the farm's transformation into a mushroom-growing facility, highlighting the teamwork and innovation behind this groundbreaking project.
