Daniel Humm, the owner and chef of NYC’s three-Michelin-starred restaurant Eleven Madison Park (EMP), has announced that the restaurant will reopen on June 10 with a new 100% plant-based menu. This decision comes after 15 months of closure, with Chef Humm wanting to evolve the business model to better align with the changing world and the need for a more sustainable food system. The EMP team is focused on creating elaborate dishes without animal products, developing plant-based milks, butters, creams, broths, stocks, and fermentation techniques.

While EMP has been known for dishes like honey lavender duck and foie gras in the past, the relaunched restaurant will now center on impeccably prepared vegetables and a more plant-based focus. Additionally, for every dinner purchased at EMP, the restaurant will provide five meals to New Yorkers in need through the Eleven Madison Truck partnership with Rethink Food. The tasting menu at EMP is estimated to cost $335 per person, including gratuity, with more details on the new menu items to come as the reopening approaches.
