Emsland Group Pea Flake Nearly Triples Protein in Baked Potato Chip Trial

Emsland Group, a leading German ingredient manufacturer, has introduced a new product, the Empure® EF 1000, a thermally treated whole yellow pea flake that significantly boosts the nutritional profile of baked potato chips. The reformulated chips achieved nearly three times the protein and double the fiber compared to the original recipe, qualifying for "high in protein" and "high in fiber" nutrition labels. While the specific amount of pea flake used in the recipe remains undisclosed, the new formulation maintains the crisp texture, color, and taste typical of standard baked potato chips.
The Empure® EF 1000 is targeted at snack and bakery manufacturers seeking to enhance the nutritional content of their products without compromising taste or texture. Emsland Group, founded in 1928 and the largest potato starch producer in Germany, processes a variety of ingredients including starches and pea protein. R&D Director Andre Heilemann emphasized that this new ingredient offers greater flexibility for product development, aligning with the trend of healthy snacks moving from niche offerings to mainstream options in the market.
