Finally Foods Completes Final Field Trial, Confirms Full Casein Expression in Potatoes

Finally Foods, an Israeli molecular farming company, has completed its final field trial confirming the successful expression of all four casein subunits in potatoes grown under open-field conditions. By growing all four subunits within one organism, the company distinguishes itself from competitors who typically produce each subunit separately using microbial fermentation systems. Co-founded by CEO Dafna Gabbay and CTO Dr. Basia J. Vinocur, Finally Foods aims to launch its casein products for commercial dairy applications by 2027 or 2028 pending regulatory approval in target markets.

The company, which emerged from stealth in April 2024 with funding from The Kitchen FoodTech Hub and the Israel Innovation Authority, utilizes computational design and AI technology from Evogene to model genetic modifications before testing in the field. With a successful final field trial behind them, Finally Foods is poised for further developments in the molecular farming of casein and anticipates making even bigger announcements in the near future.
