French Ferments du Futur Secures €20M for Second Research Phase Under France 2030

Ferments du Futur, a research program in France, has received €20 million from the National Research Agency to fund its second phase of fermentation research from 2026 to 2028 under the France 2030 investment plan. The program, led by INRAE and ANIA, involves nine research and educational institutions, 25 private companies, and seven professional organizations, aiming to advance innovation in food processing through fermentation.

The new funding will support equipment for automation, digitalization, solid-state fermentation, and post-fermentation optimization. Research includes altering aromas in plant-based products, studying microbiota interactions, and creating a global database called Siduri to understand microbial behavior during processing. This second phase introduces seven new members, bringing the total partnership to 41 organizations, with a focus on pushing the boundaries of fermentation research in the food industry.
