UK-based bakery chain Greggs has introduced a new vegan addition to its menu - the Vegan Mexican Chicken-free Bake. Made with THIS! chicken pieces, mixed vegetables, and a Mexican-style tomato sauce, the bake comes in a crispy pastry case with a cheese-flavored crumb coating, all for £1.80. Greggs has been expanding its plant-based menu in recent years, starting with the iconic vegan sausage roll in 2019, followed by other vegan options like a Sausage, Bean, and CheeZe Melt, a Glazed Ring Doughnut, and a Sausage Breakfast Roll.

The rise of plant-based eating in the UK is reflected in the growing popularity of vegan options at restaurants and food chains like Greggs. The number of British vegans quadrupled from 2014 to 2019, reaching an estimated 1.21% of the population. Additionally, research shows that almost half of Brits aged 16 to 75 are considering reducing their meat intake, with around 16% of the population identifying as flexitarians - those who mostly avoid meat but occasionally eat animal products.
