Iowa’s First Gluten-Free, Vegan Bakery to Open This Weekend

Thistle’s Summit, Iowa’s first gluten-free, vegan bakery, is set to open its doors in Des Moines this weekend. Owner Marti Payseur, who previously baked in a shared kitchen, will now have a brick-and-mortar shop to sell her popular treats, including Oatmeal Cream Pies, Tahini Chocolate Chip Cookies, and Cinnamon Rolls - all vegan and gluten-free. The shop will also offer a variety of vegan and gluten-free snacks, sauces, and pastries, and will be open Thursday through Sunday from 8am-2pm.

In addition to offering delicious baked goods, Thistle’s Summit will also feature a modern apothecary run by Payseur’s partner Ash Bruxvoort. Ash will provide hypnotherapy and private astrology readings during bakery hours, and customers can shop a selection of crystals, candles, and tarot decks.
