Owner of Chicago Vegan Restaurant Spirit Elephant to Open New Fast-Casual Concept

Spirit Elephant, a popular vegan restaurant in Winnetka, is expanding to open a new fast-casual concept called Elephant & Vine in Lincoln Park and Evanston this spring. The new restaurants will cater to the takeout and delivery crowd while still offering indoor seating and a menu featuring vegan comfort food such as Impossible burgers, sandwiches, veggie bowls, and salads. The atmosphere will be open and airy, with a focus on quick access to healthy, plant-based options, making it a convenient choice for students near local colleges and universities.

Elephant & Vine will be located in Lincoln Commons in Chicago and next to the Evanston Public Library in Evanston. The menu is still being finalized, but customers can expect a variety of plant-based dishes, including a Zero Clucks Hand Battered Chicken Sandwich and non-alcoholic beverages like smoothies and lemonades.
