Revo Foods Launches 3D-Printed Whole-Cut Vegan Salmon Filet in Vienna Supermarket

Austrian startup Revo Foods has collaborated with Sweden's Mycorena to launch the world's first 3D-printed whole-cut vegan salmon filet in Vienna's Billa Pflanzilla supermarket. The mycoprotein-based salmon uses new extrusion technology to achieve the texture and flavor of conventional fish. The mycoprotein segment is expected to reach $976M by 2032, indicating a growing demand for such plant-based foods. Revo Foods' salmon filet contains a mix of mycelium, soy protein, sunflower oil, and various other ingredients, providing 9g of protein per 100g serving.

The innovative 3D-MassFormer technology used by Revo Foods allows for mass production of the salmon filet, creating a new category of authentic seafood alternatives. The plant-based salmon will be available in European stores from October and foodservice locations in Vienna and Copenhagen. With a grant from the Austrian Research Promotion Agency and successful product launches in the UK, Revo Foods is poised to lead the alternative seafood sector with their sustainable and innovative products.
