Tabay’s Mindful Kitchen Food Truck Relocates from California to Hawaii

18-year-old vegan chef Tabay Atkins is relocating his plant-based food truck, Tabay’s Mindful Kitchen, from California to Maui, Hawaii. Known for serving plant-based versions of fast-food favorites and comfort food classics, Atkins aims to bring his innovative and mouthwatering dishes to the locals and visitors of Maui. With a diverse following of both vegans and non-vegans, Atkins and his mother, Sahel, have spent the past year making their dream of moving the food truck to Hawaii a reality.

Opening on June 1 at the OGG Food Truck Pod in Kahului, Tabay’s Mindful Kitchen will feature popular dishes like the Mexican Pizza and Persian Burger, as well as new creations inspired by local Hawaiian cuisine. Atkins plans to introduce a vegan version of the traditional Loco Moco, promising it to be a hit with customers. Embracing Maui as their new full-time home, Atkins is excited to bring his plant-based comfort food to the island and provide more vegan dining options in the area.
