Vegan JUST Egg Breakfast Sandwich Launches At 500 Barnes & Noble Stores

Barnes & Noble has introduced a vegan breakfast sandwich to its menu at over 500 stores, featuring JUST Egg and Violife dairy-free cheese. The sandwich is served in a Ciabatta roll with plant-based aioli and is available for a limited time in-store cafes across the US. This partnership represents the largest in the US for JUST Egg, known for creating vegan egg substitutes using mung beans.

The launch of the sandwich coincides with Earth Month, highlighting the sustainability benefits of choosing plant-based eggs over traditional hens' eggs. JUST Egg is a more environmentally friendly option, using significantly less water, producing fewer carbon emissions, and requiring less land. Additionally, opting for plant-based eggs helps avoid contributing to the animal cruelty prevalent in traditional egg production practices, where hens are often kept in confined battery cages with limited space to move.
